Taco Pinwheels -- Quick and Easy Recipe

These pinwheels come together quickly when you start with leftover taco meat. They make an appealing party appetizer served with salsa, or a fun lunch option with a salad on the side






  • 4 ounces cream cheese, softened
  • 3/4 cup Seasoned Taco Meat
  • 1/4 cup finely shredded cheddar cheese
  • 1/4 cup salsa
  • 2 tablespoons mayonnaise
  • 2 tablespoons chopped ripe olives
  • 2 tablespoons finely chopped onion
  • 5 flour tortillas (8 inches), room temperature
  • 1/2 cup shredded lettuce
  • Additional salsa


    • In a small bowl, beat the cream cheese until smooth. Stir in the taco meat, cheese, salsa, mayonnaise, olives and onion. Spread over tortillas. Sprinkle with lettuce; roll up tightly. Wrap securely and refrigerate for at least 1 hour.
    • Unwrap and cut into 1-in. pieces. Serve with additional salsa.

    Spring Decorating With a Blast of Color

    Use a box of food coloring to add playful punch to an array of bud vases. Fill assorted vases or recycled jars and bottles with water then tint with food coloring to match a variety of flowers. 
    You can also use white blooms (such as affordable supermarket daisies or carnations), Those thirsty petals will take on the hue of your water and you will love the results!!

    MINT CHOCOLATE CHIP COOKIES PERFECT FOR ST PATTYS DAY

    Looking for a fun and sweet St Patricks day treat??? 
     Heres a twist to your normal chocolate chip cookie


    • 1 cup sugar
    • 1/2 cup butter, softened (1 stick)
    • 1 egg
    • 1/2 cup sour cream (or plain yogurt)
    • 1 small box instant vanilla pudding mix (3.4 oz)
    • 1/2 tsp salt
    • 1/2 tsp baking soda
    • 2 cups all-purpose flour
    • 2 tsp mint extract
    • 3 drops blue coloring + 10-15 drops green coloring
    • 1 1/2 cups chocolate chips*

    1. Cream together sugar and butter. Add egg, sour cream and pudding mix.
    2. In a small bowl, combine flour, salt & baking soda.
    3. Incorporate flour mixture into the pudding mixture and mix until well combined.  Add mint extract and food coloring until desired color is achieved.
    4. Add in chocolate chips. *I used 3/4 cup chocolate chunks, 3/4 cup regular chocolate chips and 1/2 cup Andes baking bits. Any combination is wonderful, but note that while the Andes mint baking pieces add an incredible flavor, they kind of disappear in the cookies. So add them in addition to the 1 1/2 cups chocolate chips, if you opt to put them in!
    5. Drop by rounded teaspoon onto greased  cookie sheet.
    6. Bake at 375 for 10 minutes. 
    7. Transfer to a  cooling rack and enjoy! 
    8. Yields 3 dozen cookies.

    Healthy No-Bake Chocolate-Peanut Butter Bars

    One of these decadent bars is enough to satisfy any sweet tooth. They're so super chocolaty and packed with peanut butter that you won't believe they're lower in                                            calories than other, similar bars





    Crust: 
    Cooking spray
    24 chocolate wafer cookies
    3 tablespoons unsalted butter, melted
    4 ounces semisweet chocolate morsels, melted
    Filling:
    4 ounces reduced-fat cream cheese
    1/2 cup creamy all-natural peanut butter
    1/2 cup 2-percent Greek yogurt
    2/3 cup confectioners' sugar
    Topping:
    1/4 cup chopped roasted unsalted peanuts
    Kosher salt


    1. For the crust: Line an 8-inch square pan with foil so it overhangs on two sides and lightly coat with cooking spray. Process the cookies in a food processor until finely ground. Add the melted butter and process again until the crumbs are coated with the butter; add the melted chocolate and process until the mixture is the texture of very wet sand. Using an offset spatula, press the mixture into the bottom of the prepared pan, cover and refrigerate while preparing the filling. Clean out the food processor bowl.
    2. For the filling and topping: Add the cream cheese, peanut butter, yogurt and sugar to the bowl of the food processor and process until smooth and combined. Pour the mixture over the crust and smooth with a spatula. Top with the peanuts and sprinkle with 1/4 teaspoon salt. Cover and refrigerate until set slightly looser than cream cheese, about 4 hours up to overnight.
    3. Run a knife around the edges of the mixture to loosen, use the foil handles to lift it out, cut into 12 bars and serve chilled.
